Teaching Kitchen Serves Up a Healthy Taste of Fall

Guests gathered last night for an engaging and delicious teaching kitchen session led by Campus Executive Chef Severn, where participants learned how simple ingredients can create a healthier twist on a classic dessert.

The hands-on experience featured build-your-own cheesecake jars, reimagined with a Health & Wellbeing focus. Instead of a traditional cheesecake filling, attendees were able to customize their jars with a creamy Greek yogurt base, providing a lighter, protein-packed foundation. From there, guests customized their creations with a variety of wholesome toppings, including dried fruits, housemade apple butter, and naturally sweet flavors from local honey from Stein’s Honey and maple syrup from Butcher Family Farms. To add texture and seasonal flair, pepita seeds were available as a crunchy finishing touch, bringing both flavor and nutrition to the fall-inspired treat.

The recipe’s simplicity made it approachable for guests looking to re-create it at home, while the interactive format encouraged creativity and exploration of healthier ingredient alternatives. We run these events three times a semester and slots fill up FAST, so be sure to stay on the lookout so you and your peers can help us create something delicious together.
